The day
Pick-up
Your guide collects you from the place of your choice, in Bordeaux or nearby. Sauternes is about fifty kilometres south, less than an hour's drive.
First estate
Welcome from the estate team, a walk through the vines and an explanation of noble rot, then a visit of the cellars.
Lunch
Lunch at a local restaurant, at your own expense. Your guide suggests a place.
Second estate
Another visit, then a tasting of a selection of Sauternes in the tasting room.
Return
Drop-off at your pick-up place at the end of the day.
Your guide chooses the estates and the order of visits according to availability and your wishes.
What you will discover
Noble rot
Botrytis, a fungus encouraged by the morning mists of the Ciron and the Garonne, concentrates the sugars in the grapes. It is what makes great sweet wines.
Harvesting in several passes
Grapes are picked by hand, in several passes through the vines, as each bunch reaches the right concentration.
Barrel ageing
After fermentation, the wines mature in oak barrels. Your guide explains what time brings to the wine.
Honey and apricot
In the glass: honey, apricot, sweet spice and vanilla, with acidity that balances the sweetness.
